Most of my relationship with A&S thus far has revolved around fermentation. I have keen interest in using historical and indigenous knowledge to inform practices of the present. For instance, shrub-like health tonics were used in the middle ages, which often required one to first make alcohol, then allow it to sour, and the subsequent vinegar was mixed with sugar and water to create sparkling sour beverages. I enjoy celebrating our local ecosystem by subjecting New-World plants to Old-World processes, such a black raspberry – pumpkin juice shrub that has proved to be absolutely delectable.

I also enjoy entertaining the notion of inserting pieces of knowledge in historical context. Inspired by traditional hard cider recipes, I use a one-step process utilizing aqua-kefir grains, discovered in the 1800s, to create a non-alcoholic hard-cider alternative to refresh my fellow fighters, potentially increasing troupe nutrition while mitigating rowdy soldiers! I am currently working on recipes for utilizing traditional malts to make non-alcoholic beer alternatives, similar to a saison beer.

I’m a huge fan of traditional herbal practices, and am always marrying old world plants and new ones in my medicinal recipes, such as a shrub-like concoction of autumn-harvested American sycamore leaves and European burdock to create a subjectively effective and objectively delicious respiratory and gastrointestinal tonic.
